The menu created by Chef Edgar Román showcases local ingredients, the freshest seafood, and organic vegetables. With more than 20 year experience in kitchens, the strength of Chef Edgar lies in his passion for exalting the flavor of each ingredient he uses, and to provide a round fine dining experience paired with Mexican, US wines (mostly), and the exquisite agave spirits.
